  • Whole garam masala: 1 bay leaf, 2 cloves, 1 black cardamom, 1-inch cinnamon stick, and 5-6 black peppercorns
  • 1 large onion, blended into a paste
  • 2 medium tomatoes, pureed
  • 2 teaspoons ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 4 teaspoons coriander powder
  • Salt to taste
  • 1 cup water (adjust as needed)
  • 1 green chili, chopped (optional, for garnish)
  • Fresh coriander leaves, chopped (for garnish)
  • 300 grams paneer, cut into cubes
  • 1 cup green peas (fresh or frozen)

Instructions

  1. Prepare the Masala Base:

    Heat a deep frying pan or kadai over medium heat. Add 2 tablespoons of oil. Add the whole garam masala: bay leaf, cloves, black cardamom, cinnamon stick, and black peppercorns. Sauté for a few seconds until you feel they are releasing their aroma.

  2. Cook the Onion Paste:

    Add the onion paste to the pan and cook for 2-3 minutes until it turns golden brown.

  3. Add Spices:

    Stir in 1 teaspoon red chili powder, 1/2 teaspoon turmeric powder, and 4 teaspoons coriander powder. Now, add a little bit of water to prevent the spices from burning. Sauté for another 2 minutes.

  4. Tomato Puree and Seasoning:

    Add the tomato puree and salt to taste. Cook the mixture until the oil begins to separate and float on top, stirring occasionally. This can take about 5-7 minutes.

  5. Cook the Peas:

    Add the green peas and stir to coat them in the masala. Cook for 2-3 minutes.

  6. Adjust Gravy Consistency:

    Pour in 1 cup of water (or adjust according to your preferred gravy consistency) and bring it to a gentle simmer. Cover the pan with a lid and let the peas cook until they’re tender, about 5-8 minutes.

  7. Add Paneer Cubes:

    Add the paneer cubes and gently mix them into the gravy, ensuring they’re well-coated. Cover and cook for another 5-7 minutes, allowing the paneer to absorb the flavors and the gravy to thicken.

  8. Garnish and Serve:

    Once your gravy reaches your desired consistency, turn off the flame. Garnish with freshly chopped coriander leaves and a green chili for an extra kick if desired.
