Makhana kheer is a traditional Indian dessert generally used during fasting periods, made with makhana, (also known as fox nuts or lotus seeds), milk, sugar, and other ingredients. So, let's get started to prepare delicious Makhana Kheer.

Ingredients:

  • 1 cup makhana (fox nuts or lotus seeds)
  • 1-liter full-fat milk
  • 1/2 cup sugar
  • 1/2 tsp cardamom powder
  • 2 tbsp chopped nuts (almonds, pistachios, cashews)
  • 1 tbsp raisins
  • 1/4 cup dry grated coconut (For creamy texture)

Instructions:

  1. Roasting Process: Roast the makhana on low flame until they turn crispy and become moisture-free. Don’t make them golden brown. Keep stirring continuously to avoid any burning. Alternatively, you can roast these makhanas in the microwave for 30 to 45 seconds only. Once done, keep them aside.
  2. Crushing Process: Crush these makhana in a grinder. Make sure that makhana will not become fine powder.
  3. Boiling Milk: In the deep pan or kadai, add the milk and bring it to a boil. Reduce the flame from high to medium and let the milk boil.
  4. Thick Consistency: Add the roasted makhana and dry grated coconut to the boiling milk and let it simmer until the mixture becomes uniformly thick (make sure makhana are not separated from the milk), stirring occasionally over a low flame.
  5. Adding Flavor: Add the sugar, cardamom powder, chopped nuts, and raisins to the pan and mix well.
  6. Additional Boiling: Let the kheer simmer for another 5-10 minutes or until it thickens to your desired consistency.
  7. Cooling Process: Turn off the heat and let the kheer cool down to room temperature. You can also chill it in the refrigerator before serving, depending entirely on your preference.
  8. Serving Process: Serve the makhana kheer garnished with some more chopped nuts.
