2 cup all-purpose flour
½ cup besan (gram flour)
1 cup semolina (suji)
1 cup melted ghee (clarified butter)
¾ cup powdered sugar
½ tsp baking powder
½ tsp cardamom powder
3-4 tsp milk
A pinch of salt
Chopped nuts for garnish (optional)

Instructions:

Preparing Dough:
  • In a mixing bowl, mix together all-purpose flour, semolina, gram flour, baking powder, and cardamom powder.
  • In a separate mixing bowl, cream together the butter (or pure ghee) and powdered sugar until light and fluffy.
  • Gradually add the dry ingredients to the wet mixture and mix until everything is well combined. The dough should be enough soft and pliable.
Making Nankhatai Balls:
  • Shape the dough into small balls (around 1.5 inches in diameter) and place them on the baking sheet.
  • Coat each ball by milk with the help of brush.
  • Make sure to leave enough space between them as they will expand during baking.
  • Flatten the balls slightly and sprinkle some chopped nuts (if using) on top.
Baking Process:
  • Preheat your oven to 350°F (180°C) and line a prepared baking sheet.
