Washing Process
  • Rinse the Poha in water until it softens, then drain off the water and set aside.
Cooking
  • In a pan, heat the oil over a medium flame. Add the mustard seeds and let them splutter, then add curry leaves and sauté for 10-15 seconds.
  • Add chopped onions, and green chilies, and sauté until onions turn translucent.
  • Add peanuts (optional), salt to taste, and turmeric powder, red chilli powder and sauté for another 1-2 minutes.
  • Add the drained Poha to the pan and mix well, making sure everything is evenly coated with the spices.
  • Cook for another 2-3 minutes until everything is heated throughly.
  • Now, finally add 1/2 teaspoon sugar that definately gives Gujrati tadka in your recipe, if you wish.
Garnishing
  • Turn off the heat, and garnish with fresh chopped coriander leaves and Namkeen Mixture(optional), and mix well.
Serving
  • Serve hot with lemon wedges and green chutney.

Tips and Tricks for Perfect Recipe:

  1. Rinse the Poha properly to soften it, but be careful not to over-soak it as it can turn mushy.
  2. Use fresh vegetables like onions, potatoes, and green chilies for the best taste.
  3. Adjust the spice level according to your taste by adding more or less green chilies.
  4. Make sure the spices are evenly distributed throughout the Poha by mixing it well.
  5. Use a non-stick pan to prevent the Poha from sticking to the bottom of the pan.
  6. Add lemon juice and green chutney for extra flavor.
  7. Serve the Poha garnished with namkeen immediately after preparing it for the best taste and texture.
