This indicates that bitter gourd has a very bitter taste, and that's why many members of your family, especially children, do not like its taste at all. Here's the list of all required ingredients for preparing bitter gourd (karela).

Ingredients:

  • 1/2 kg medium-sized bitter gourds (karela)
  • 4 large size chopped onions
  • 1 tablespoon red chili powder
  • 1 teaspoon turmeric powder
  • 2 teaspoons salt
  • 1 tablespoon fennel seeds (saunf)
  • 2 teaspoons amchur powder (dried mango powder)
  • 2 teaspoons coriander powder (dhaniya powder)
  • 4 tablespoons mustard oil, for frying

Preparation

Washing

  • Wash the bitter gourds thoroughly and cut them into thin slices.
  • Apply salt generously all over the bitter gourd slices and let them sit for 1 hour. This helps to reduce the bitterness.
  • After 1 hour, rinse the bitter gourd slices thoroughly under running water and squeeze out the excess water.

Cooking Process

Frying Bitter Gourd

  • Heat mustard oil in a pan and fry the bitter gourd slices until they are crispy and golden brown.
  • Remove fried bitter gourd slices and set aside.

Frying Onion

  • Add 2 tablespoons mustard oil in the pan again, to fry chopped onion until transparent.

Mixing With Spices

  • Add fried bitter gourd slices back to the pan with the onions.
  • Add turmeric powder, coriander powder, red chili powder, 1/2 teaspoon salt, and crushed fennel seeds. Stir well.

Adding Water

  • Add 2 tablespoons water, cover, and simmer for 8-10 minutes, stirring occasionally.

Adding Sourness

  • After 8-10 minutes, add amchur powder to the pan and stir well.
  • Continue to cook for an additional 5 minutes or until the dish is dry.

Serving

  • Delicious and nutritious bitter gourd is ready to serve. Enjoy with fresh, hot chapatis or as a side dish with rice.
