Ingredients
  • 500g pumpkin
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon fenugreek seeds
  • 1/4 teaspoon hing (asafoetida) powder
  • 2 bay leaves
  • 5-6 cloves
  • 1 teaspoon black pepper powder
  • 4 chopped green chilies
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1 teaspoon red chili powder
  • Water (as needed)
  • Salt (to taste)
  • 1/4 teaspoon black salt
  • 1 cup water
  • 1 chopped unripe mango
  • 20g jaggery (unrefined cane sugar)
  • Fresh coriander leaves (for garnish)

Instructions
  1. Heat up two tablespoons of oil in a skillet or frying pan.
  2. Add 1 teaspoon of cumin seeds and 1/2 teaspoon of fenugreek seeds. Sauté them for a minute until they splutter.
  3. Add 1/4 teaspoon of hing (asafoetida) powder, 2 bay leaves, and 5-6 cloves. Stir them for a few seconds.
  4. Add 1 teaspoon of black pepper powder and 4 chopped green chilies. Mix well.
  5. Now, add 1 teaspoon of turmeric powder, 2 teaspoons of coriander powder, and 1 teaspoon of red chili powder. Stir the spices for a minute.
  6. Add a little bit of water to prevent the spices from burning and sticking to the pan.
  7. Next, add 500g of pumpkin pieces and salt to taste. Mix everything together.
  8. Pour 1 cup of water into the pan and cover it with a lid.
  9. Cook the pumpkin for 15 minutes on medium heat.
  10. After 15 minutes, open the lid and add 1 chopped unripe mango. Mix it gently.
  11. Cook the pumpkin and mango mixture for an additional 5 minutes with the lid open.
  12. Open the lid and add 20g of jaggery. Stir well to combine.
  13. Allow the excess water to evaporate, and mash the mixture slightly with a spoon.
  14. Finally, add some fresh coriander leaves and garnish the dish with a few more coriander leaves.
