Pumpkin Recipe
Ingredients
- 500g pumpkin
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon fenugreek seeds
- 1/4 teaspoon hing (asafoetida) powder
- 2 bay leaves
- 5-6 cloves
- 1 teaspoon black pepper powder
- 4 chopped green chilies
- 1 teaspoon turmeric powder
- 2 teaspoons coriander powder
- 1 teaspoon red chili powder
- Water (as needed)
- Salt (to taste)
- 1/4 teaspoon black salt
- 1 cup water
- 1 chopped unripe mango
- 20g jaggery (unrefined cane sugar)
- Fresh coriander leaves (for garnish)
Instructions
- Heat up two tablespoons of oil in a skillet or frying pan.
- Add 1 teaspoon of cumin seeds and 1/2 teaspoon of fenugreek seeds. Sauté them for a minute until they splutter.
- Add 1/4 teaspoon of hing (asafoetida) powder, 2 bay leaves, and 5-6 cloves. Stir them for a few seconds.
- Add 1 teaspoon of black pepper powder and 4 chopped green chilies. Mix well.
- Now, add 1 teaspoon of turmeric powder, 2 teaspoons of coriander powder, and 1 teaspoon of red chili powder. Stir the spices for a minute.
- Add a little bit of water to prevent the spices from burning and sticking to the pan.
- Next, add 500g of pumpkin pieces and salt to taste. Mix everything together.
- Pour 1 cup of water into the pan and cover it with a lid.
- Cook the pumpkin for 15 minutes on medium heat.
- After 15 minutes, open the lid and add 1 chopped unripe mango. Mix it gently.
- Cook the pumpkin and mango mixture for an additional 5 minutes with the lid open.
- Open the lid and add 20g of jaggery. Stir well to combine.
- Allow the excess water to evaporate, and mash the mixture slightly with a spoon.
- Finally, add some fresh coriander leaves and garnish the dish with a few more coriander leaves.
