Ingredients

  • 1/2 liter of milk (for making chenna)
  • 1/2 liter of milk (for making syrup)
  • Food color or kesar (saffron) (optional)
  • 1 tsp. Green cardamom powder
  • 1 tsp. vinegar or lemon
  • 1 cup of sugar
  • Dry fruits for garnishing (e.g., almonds, pistachios, cashews)
  • 1/2 liter of water

Instructions

Making Chenna

  • Pour 1/2 liter of milk into a large pot and bring it to a boil.
  • Once the milk starts boiling, reduce the heat to low.
  • Slowly add lemon juice or vinegar to the milk while stirring continuously.
  • The milk will curdle, and the whey will separate from the chenna.
  • Turn off the heat and let it sit for 5 minutes.
  • Line a strainer or colander with a muslin cloth or cheesecloth.
  • Pour the curdled milk into the cloth-lined strainer.
  • Rinse the chenna under cold water to remove any lemony flavor.
  • Gather the edges of the cloth and squeeze out any excess liquid.
  • Hang the cloth for about 30 minutes to allow excess whey to drain off.
  • After 30 minutes, the chenna will be ready for use.

Making Pakoris

  • Take the prepared chenna and knead it well until it becomes a smooth dough, ensuring ghee will not squeeze out.
  • Divide the dough into small portions and shape them into small balls of 1/2-inch diameter.

Making Sugar Syrup

  • In a separate pot, pour 1/2 liter of water and bring it to a boil.
  • Once the water starts boiling, add 1/2 cup of sugar and stir until it dissolves completely.

Sugar Dipped Pakoris

  • Gently add chenna pakoris to the sugar syrup and boil them for the next 15 minutes.

Making Milk Syrup

  • In another pot, pour 1/2 liter of milk and bring it to a boil.
  • Once the milk starts boiling, reduce the heat to low.
  • Add sugar and stir until it dissolves completely.
  • Stir the syrup occasionally to prevent it from sticking to the bottom of the pot.
  • Simmer the milk on low heat until it reduces to 400 ml.
  • Add a pinch of green cardamom powder and mix well.
  • If desired, add a few strands of saffron (kesar) or yellow food color for an attractive hue
  • Transfer the pakoris from the sugar syrup to the milk syrup and boil for 10 minutes.

Garnishing and Serving

  • Transfer the soaked pakoris to a serving dish.
  • Garnish with chopped dry fruits like almonds, pistachios, and cashews.
  • Serve the delicious Dhudh Pakoris as a sweet treat for special occasions or festivals.
