Khasta Kochori
To make Khasta Kachori at home
You'll need ingredients like all-purpose flour, oil, urad dal, spices, and water. Here's a simplified recipe:
Ingredients:
- 2 cups all-purpose flour (maida)
- 1/4 cup oil
- 1/2 cup water
- 1 cup washed urad dal (soaked)
- 1 teaspoon fennel seeds
- 1/2 teaspoon asafoetida (hing)
- 1 teaspoon red chili powder
- 1 teaspoon gram masala
- Salt to taste
- Oil for frying
Instructions:
- Prepare the Dough:
- Mix all-purpose flour, oil, and salt (to taste).
- Add water gradually to form a stiff dough.
- Cover and let it rest for 15-20 minutes.
- Prepare the Filling:
- Drain soaked urad dal.
- Grind it coarsely without adding water.
- Heat oil in a pan, add hing and crushed fennel seeds.
- Add pinch of salt, red chili powder and gram masala.
- Add the coarsely ground urad dal and sauté until it turns golden.
- Cook until the mixture is dry. Let it cool.
- Assemble and Fry:
- Divide the dough into small balls.
- Roll each ball into a small disc.
- Place a spoonful of the urad dal mixture in the center.
- Seal the edges and flatten slightly.
- Heat oil for frying.
- Fry kachoris on medium heat until golden brown and crisp.
- Serve:
- Drain excess oil and serve khasta kachori hot with potato sabji and tamarind chutney or corriender chutney.
