Ingredients:

  • 2 cups all-purpose flour (maida)
  • 1/4 cup oil
  • 1/2 cup water
  • 1 cup washed urad dal (soaked)
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon asafoetida (hing)
  • 1 teaspoon red chili powder
  • 1 teaspoon gram masala
  • Salt to taste
  • Oil for frying

Instructions:

  1. Prepare the Dough:
    • Mix all-purpose flour, oil, and salt (to taste).
    • Add water gradually to form a stiff dough.
    • Cover and let it rest for 15-20 minutes.
  2. Prepare the Filling:
    • Drain soaked urad dal.
    • Grind it coarsely without adding water.
    • Heat oil in a pan, add hing and crushed fennel seeds.
    • Add pinch of salt, red chili powder and gram masala.
    • Add the coarsely ground urad dal and sauté until it turns golden.
    • Cook until the mixture is dry. Let it cool.
  3. Assemble and Fry:
    • Divide the dough into small balls.
    • Roll each ball into a small disc.
    • Place a spoonful of the urad dal mixture in the center.
    • Seal the edges and flatten slightly.
    • Heat oil for frying.
    • Fry kachoris on medium heat until golden brown and crisp.
  4. Serve:
    • Drain excess oil and serve khasta kachori hot with potato sabji and tamarind chutney or corriender chutney.
