Ingredients Preparation:

  • 300 g small potatoes
  • 2 bay leaves
  • 1-inch cinnamon stick (as long as your little finger)
  • 10 black pepper
  • 4-5 cloves
  • 2 green cardamoms
  • 1 black big cardamom
  • 2 large onions
  • 1 tomato
  • 1-inch ginger (as long as your little finger)
  • 8-10 garlic cloves
  • 1/2 cup yogurt, whisked
  • 1 teaspoon red chili powder (or as per your taste)
  • 1/2 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • Salt to taste
  • 2 tablespoons oil
  • 1 cup water (adjust as needed for gravy)
  • Fresh coriander leaves for garnish

Initial Cooking:

  • Heat a deep pan or kadai over medium flame.
  • Add 2 tablespoons of oil and wait until it becomes hot.
  • Fry the potatoes in the hot oil until they become golden brown on all sides.
  • Remove the fried potatoes and set them aside on a plate.

Prepare the Masala:

  • In the remaining oil, add the whole spices (bay leaves, cinnamon, black peppercorns, cloves, green and black cardamoms) and sauté for a few minutes.
  • Prepare a paste of the onions, ginger, and garlic, then add this paste to the pan. Stir the mixture continuously for a few minutes.
  • Add 1 teaspoon of red chili powder, 2 teaspoons of coriander powder, and half a teaspoon of turmeric powder. Continue to sauté for a few minutes.
  • Add tomato purée and 1 teaspoon of salt. Stir continuously until the oil starts to separate from the masala.
  • Add half a cup of curd to the mixture, mixing well.

Cooking the Potatoes:

  • Add the fried potatoes to the masala, ensuring each potato is evenly coated.
  • Add a cup of water and mix well. Allow the mixture to cook for about 15 minutes or until the potatoes become soft. Check the softness of the potatoes during cooking.

Final Touches:

  • Once the potatoes are soft, add fresh coriander leaves for garnish.

Serving:

  • Serve the Dum Aloo in a serving bowl, ready to be enjoyed with rice, naan, or any Indian bread of your choice.
