- Preparing the Carrots: Wash and peel the carrots. Cut them into thin rounds or julienne strips, whichever you prefer. This will ensure even cooking and absorption of flavors.
- Boiling the Carrots: In a large pot, bring sufficient water to a boil. Carefully add the carrot slices and simmer until they are just tender. It's crucial not to overcook them; we want them to retain a slight crunch and rawness.
- Cooling and Infusing: Once the carrots are cooked, allow them to cool completely. In a separate container, add enough water to make a total of 2 liters. Now, add two teaspoons of yellow mustard seeds powder, one teaspoon of red chilli powder, and salt to taste into the water. Mix well until all the spices are dissolved complety.
- Combining the Ingredients: Transfer the cooled carrots into the spiced water mixture. Ensure that the carrots are fully submerged. Simply give it a delicate swirl to ensure the flavors are evenly spread throughout.
- Fermentation Process: Transfer the concoction into an airtight container. Seal it tightly and place it in a cool, dark place for fermentation. Let it sit for at least 3 days to allow the flavors to meld and develop.
- Enjoying the Kanji: After 3 days, your Kanji will be ready to tantalize your taste buds. Serve it chilled or at room temperature as a refreshing accompaniment to your meals.
