Hello friends! Today in the Daily Food Kitchen, we are going to make Lauki Raita. Lauki, also known as bottle gourd, is a commonly found vegetable in India. You can use this raita as a side dish, or you can also enjoy it during your fasts. For the raita used in fasting, we will replace common salt with sendha namak (rock salt). So, let's get started with making this raita.

Preparation Steps:

  1. Wash and Peel the Lauki:

    Begin by thoroughly washing the lauki, then peel it before grating to ensure it's clean and free of any dirt.

  2. Grate the Lauki:

    After washing and peeling, grate the lauki. Be careful while grating to avoid any injuries.

  3. Boil and Squeeze the Grated Lauki:

    In a saucepan, boil half a glass of water and add the grated lauki. Boil it until it becomes soft. This usually takes about 5-7 minutes, depending on the quantity and the heat level. , depending on the quantity and the heat level. Let it cool down completely for a few minutes before adding yogurt. If a little bit of water remains after boiling the lauki, you can directly add it to the yogurt. However, if a significant amount of water is left, then, using both hands, squeeze out the excess water from the boiled lauki by pressing it gently. I advise you not to discard it. Since this extract contains many essential nutrients, you can use it for making your dough for roti or as a vegetable extract in any other recipe.

  4. Prepare the Yogurt:

    In a mixing bowl, take 250g of yogurt. Whisk it well until it's smooth.

  5. Mix Lauki with Yogurt:

    Once the squeezed lauki has cooled down, add it to the yogurt. To amplify the taste, thoroughly blend the mixture to ensure uniform distribution of the seasoning.

  6. Season the Raita:

    Add salt to taste and one teaspoon of black pepper powder to the lauki-yogurt mixture. Mix well to ensure the flavor.

  7. For Fasting Option:

    If you're preparing this raita for fasting, replace the common table salt with sendha namak (rock salt) to adhere to fasting guidelines.

Serving:

Once the raita is prepared, you can chill it in the refrigerator for a while before serving if you prefer it cold. This raita goes well with any meal, providing a cooling effect, especially during warm weather or with spicy dishes.
