Masala Soya Chunks
Cooking Time: 30 minutes

- Boil the soya chunks in a saucepan with one glass of water. Once boiled, strain out the hot water and let the soya chunks cool down. Remove excess water.
- Heat 1 tablespoon of oil in a deep kadhai or pan. Add cloves, bay leaf, cinnamon, black cardamom, and black peppercorns. Let them splutter.
- Add chopped onions and sauté until transparent. Then, add ginger garlic paste and cook for a minute.
- Add chopped tomatoes, red chili powder, turmeric powder, and salt. Stir continuously until the oil separates from the masala.
- Let the masala cool down, then transfer it to a blender and grind into a smooth paste.
- In the same pan, heat the remaining oil and add the boiled soya chunks. Dry them completely over low flame.
- Once dry, set aside the soya chunks on a plate.
- Add the prepared ground masala to the pan. Stir for a few minutes.
- Add the soya chunks to the masala and mix well until completely coated. Cover the pan with a lid and cook for 5 minutes over low flame.
- Garnish with fresh coriander leaves.
- Serve masala soya chunks with puri, paratha or chapati.
