    • Peel and chop the onions, ginger, and garlic. Then, grind them into a smooth paste using a food processor (mixture grinder) or mortar and pestle.
    • Before cooking, rinse the chicken pieces and set them aside.
  2. Saute Spices:
    • Heat oil in a pan or pressure cooker over a medium flame.
    • Add bay leaves, black peppercorns, cloves, cinnamon stick, and black cardamom to the hot oil.
    • Stir for about a minute until the spices release their aroma.
    • Add the onion-ginger-garlic paste and sauté continuously for 2 to 3 minutes until the raw smell disappears.
  3. Add Dry Spices:
    • Now, add Kashmiri red chili powder, turmeric powder, coriander powder, and salt to taste.
    • Stir well and sauté with a tablespoon of water until the oil separates from the masala.
  4. Cook Chicken:
    • Now, add the chicken pieces to the masala mixture and ensure they are thoroughly coated for an even flavor.
    • Stir continuously for about 5 minutes to ensure the chicken is well-coated with the spices.
    • Pour in 2.5 glasses of water and mix everything well.
  5. Pressure Cook:
    • Close the pressure cooker and cook until you hear three whistles or until the chicken is perfectly cooked.
  6. Serve:
    • Once cooked, serve the delicious chicken curry hot with chapati, puri, or rice.
