Chicken Curry

- Preparation:
- Peel and chop the onions, ginger, and garlic. Grind them into a smooth paste using a food processor or mortar and pestle.
- Clean the chicken pieces and set them aside.
- Saute Spices:
- Heat oil in a pan or pressure cooker over a medium flame.
- Add bay leaves, black peppercorns, cloves, cinnamon stick, and black cardamom to the hot oil.
- Stir for about a minute until the spices release their aroma.
- Add the onion-ginger-garlic paste and sauté continuously for 2 to 3 minutes until the raw smell disappears.
- Add Dry Spices:
- Now, add Kashmiri red chili powder, turmeric powder, coriander powder, and salt to taste.
- Stir well and sauté with a tablespoon of water until the oil separates from the masala.
- Cook Chicken:
- Add the chicken pieces to the masala mixture and coat them evenly.
- Stir continuously for about 5 minutes to ensure the chicken is well-coated with the spices.
- Pour in 2.5 glasses of water and mix everything well.
- Pressure Cook:
- Close the pressure cooker and cook until you hear three whistles or until the chicken is perfectly cooked.
- Serve:
- Once cooked, serve the delicious chicken curry hot with chapati, puri, or rice.
