Ingredients:

  • 100 g green chillies
  • 1 tablespoons refined oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 4 tablespoons vinegar
  • 1/2 cup water

Instructions:

Wash the chillies

  • Wash the green chillies thoroughly and remove the stems. You can adjust the weight of chilies depending on how spicy you want your sauce to be.
  • Heat the Pan

  • Heat the refined oil in a pan over medium heat.
  • Sauté the Green Chillies

  • Add the green chilies to the pan and sauté them for a couple of minutes until they become slightly soft.
  • Add salt, sugar, vinegar, and water to the pan one after another. Mix all the ingredients together thoroughly.
  • Simmer the Green Chillies

  • Reduce the heat to low and let the mixture simmer for about 10 to 12 minutes. This will allow the flavors to blend and the chilies to soften further.
  • Cool Down at Room Temperature

  • Remove the pan from the heat and allow the mixture to cool down to room temperature.
  • Grind the Paste

  • Transfer the cooled mixture to a blender or food processor to make a smooth and fine paste.
  • Blend the mixture until you achieve a smooth consistency. You can add more water if needed to adjust the thickness of the sauce.
  • Adjust the Seasoning

  • Once blended, taste the sauce and adjust the seasoning if necessary. You can add more salt, sugar, or vinegar according to your taste preference.
  • Store the Sauce

  • Pour the green chili sauce into another airtight container to store it properly.
  • You can store this green chili sauce for at least 2 months in a refrigerator.
